

An oyster is about as close to the sea as you can get without getting wet. On 5 September we devote the whole day to them.
We shuck Swedish and French oysters to order and serve them as they are — with lemon, with red wine vinegar and shallots, or entirely unadorned. For anyone who prefers something warmer there are gratinated options, alongside sparkling wine, dry white or an alcohol-free pairing.
