
Surströmming is Sweden’s most debated delicacy, and one of very few dishes you have to make your mind up about in advance. On 20 August we open the tin — outdoors, as it should be.
The service is the classic one: thin flatbread, almond potatoes, finely chopped red onion, sour cream and chives. You build your own parcel, take a bite, and form an opinion. Many are surprised. Some fall in love. Nobody leaves without a view on the matter.
